This recipe doubles easily and tastes better as it sits in the refrigerator. Perfect if there is a chance you will be without power in the next few days.
Oriental Chicken Salad
2 cups cooked chicken meat, cubed
4 cups cabbage, shredded
2/3 cup green onion, chopped
1 package Top Ramen noodles, crumbled dry (any brand will work, actually)
1/2 pkg ramen seasoning package
2 tbsp sugar
1 tbsp soy sauce
1/2 cup seasoned rice vinegar
1/4 cup canola oil
1 tsp sesame oil
Wisk salad dressing ingredients together and then toss with salad ingredients. Garnish with sesame seeds. Mandarine oranges or pineapple could be added for a little extra sweetness.
You can make this vegetarian but increase the cabbage by a couple cups so it isn't swimming in dressing.
