My garden zucchini is doing great! Even with all the zucchini I have given away... please! Take some!! I still have a bunch to eat.
Since I also have feta cheese left from my gyros, I've tried a quick veggie side dish.
Veggie Side Dish
- Feta cheese
- 1-2 small zucchini, sliced
- 1 medium pepper, cut in strips (I used frozen peppers)
- 1/4 medium onion, slice rings and then cut the rings in half
- 1 clove garlic, minced
- olive oil
- 1 tsp Italian or Greek seasoning mix
- salt & pepper to taste
drizzle oil in a frying pan over medium heat and stir the garlic and onion for a few minutes, until the onion starts to get clear. Add the peppers and zucchini, stir to combine and sprinkle with the seasoning. and a pinch of salt. Cook for a few minutes stirring occasionally. When the seeds just start to be visible on the zucchini, it is done. Serve with feta cheese sprinkled over the top while the vegetables are still hot.
Another option for cooking vegetables is if you have meat with your dinner, use the pan the meat was cooked in to saute the vegetables. Just remove any grease and add about 1/4 cup of water when starting the garlic and onions to pick up the pan drippings.
It seems like goat cheese would be great crumbled over these sauted vegetables as well.
